Appearance

Pale yellow with fine, persistent bubbles.

Nose

Green apple, ripe strawberry and a fresh citrus lift.

Palate

Fresh and fruit-forward with a refreshing dry finish. A lovely viscous mouthfeel balanced by cleansing, cool-climate acidity.

What the winemaker, Alex McKay, did

The base wine was made using only free-run juice, with pressings kept aside for another wine. The juice was  fermented primarily in stainless steel, with minimal oak influence to preserve purity of fruit. Full malolactic maturation softened the natural acidity and built texture.

The wine was then finished using the Charmat method, with a second fermentation carried out in tank prior to bottling. This approach enhances freshness, bright fruit flavours and a fine, lively bead — giving the wine its effortless charm and easy appeal. The final stage of production was completed by Peterson House in the Hunter Valley.
