Dense red fruit with dark cherry followed by fine tannins with a long and lingering finish.
What Alex Mackay (our winemaker) did
The grapes were pressed using the traditional Burgundian method of pigeage (by foot). Around 10% of the bunches were left whole during the subsequent fermentation to add complexity to the wine. The wine was matured in French oak barrels (20% new) for 11 months before being blended together and bottled.
